Brains Are Yucky

I was reading the paper this morning when Mia tried to grab it away.

Me- Hey, I am reading that.
Mia- No, you aren't.
Me- Yes, I am. Don't take it.
Mia- No, you aren't. I can't hear you.
Me- I am reading in my brain.
Mia- Eww.

And then a little later...

Me- You look really cool today.
Mia- No, I don't.
Me- Yes, you do.
Mia- No, I don't. I am not a boy. Only boys are cool.

Recipe

This is a new recipe I made up. Charlie wanted me to copy a recipe from a restaurant and I couldn't find a similar recipe so I came up with this one, and I bet it is healthier too. The chicken part is from my friend Tiffany.

Sour Cream Enchiladas

2 Tbs butter
2 Tbs flour
1 clove garlic, minced
1/2 c milk
1/2 c half and half
3/4 c sour cream
6-8 flour tortillas (8 inch)
2 c jack cheese shredded

3 boneless, skinless chicken breasts
1 package taco seasoning
1 can rotel tomatoes and chili

Put chicken, seasoning, and rotel in crock pot. Cook on low 6-8 hours. Shred with a fork. In pot over medium heat melt butter. Add garlic and flour. Stir. Whisk in milk and 1/2&1/2. Let thicken. Whisk in sour cream and remove from heat. Put large pan on stove over medium heat. Spray with pam and heat tortillas so they are flexible. Spray casserole dish with pam and put about 1/4 cup of sauce in bottom of dish. Put chicken mixture in tortillas, roll up and place in dish. Pour sauce over enchiladas. Cover and bake at 375 for 20-25 minutes. Sprinkle cheese over top of enchiladas and bake 5 more minutes until cheese is melted.

I used fat free milk and 1/2&1/2. I also used low fat sour cream. I wouldn't recommend fat free sour cream because the flavor isn't as good and you need some fat for it to cook properly.

One Foot In

Justin ran up to me just now and asked what year I was born in. I told him and he said "Whew, because if you were born between the years 1920 and 1970 then your casket would cost $60,000! The T.V said so." At times like these it is such a great comfort to know someone is already planning my funeral arrangements for me, and planning to cover the costs too.

The Birdie

Emma walked up to me and held up her middle finger in my face. I looked at her, gasped, and slapped her hand. I thought "what are those horrible kids at school teaching my sweet innocent Emma at recess?!" I said "Emma! You never put up your middle finger like that. It means the F-word! It is REALLY bad. It is one of the worst bad words there is!" Then I pause and look at her face. Her spirit is crushed. Tears are starting to roll down her cheeks. I look closer at her finger and there is a cut on her middle finger that she had been trying to show me. I felt horrible. This is a moment I wish I could take back. She was completely distraught at this point. Charlie had to hold her while I got her a band aide. My poor, sweet, little Emma. All she wants in life is to be good and make me happy.
