Crispy Seafood Toast

These seafood toast are SO simple to prepare and are a very tasty finger food for party. Each toast has a layer of generous seafood spread and a layer of crisp bread sandwich. You can use any bread you love but I do recommend thinner bread as it absorb less oil when we deep fry it. 
Today, I am using Borges's Grapeseed oil for frying. Do you know Grapeseed oil are very suitable for deep frying as well as normal daily cooking? It's smoking point can be up to 210-245ºC. They are a healthier choice of oil as it is Cholesterol Free, contains vitamin E & A, acid linoleic essential fats, etc.  In addition to this smoking point, Grapeseed oil has other positive attributes in relation to cooking. It has a clean, light taste that can be described as “nutty”. 

Crispy Seafood Toast
(Make 14pcs)

Ingredients
  • 120g shrimps 
  • 120g squid
  • 1 egg white
  • 10g ginger
  • 25g corn
  • Some spring onions
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 teaspoon corn starch (Sorry not in picture)
  • Dashes of black pepper (Sorry not in picture)
  • 4 tablespoon of sesame seeds 
  • 7 slices breads (Trim away the side and cut into half)
  • Borges Grapeseed oil for deep frying

Steps: 
  1. Put squids, shrimps, egg white, corns, spring onions, ginger, salt, sugar, black pepper into a blender.
  2. Blend it well and add in cornstarch. Blend it into a sticky paste.
  3. Spread a generous layer of seafood paste on the bread and sprinkle the white sesame seed on it. Repeat the spreading till you use up all the paste.
  4. Heat Borges Grapeseed oil in a pot. Use a leftover bread stick to test whether the oil is ready for deep frying. If there is bubbles on the bread, you may start frying the seafood toast.
  5. Slowly place the seafood toast with sesame down to fry first for 1-2 mins. Turn over to brown the bread layer. Yummy crispy seafood toasts are ready to serve! 

It still taste good even it is cold. Great snack for kids to bring to school too! I will continue to use these healthy oil for my daily cooking for my family. What about you? :)

Meat Dumplings aka Siew Mai

A must have dim sum!

Meat Dumplings aka Siew Mai
(Make 10 big pcs)
Recipe by Taglicious

Ingredients
  • 10-12pcs dumplings skin
  • 250g minced pork
  • 100g minced prawn
  • 40g minced water chest nut
  • 20g minced carrots
  • 30g minced dried mushroom
  • 1 salted egg yolk, cut into 10 small pcs
  • 1.5 tablespoon light soy sauce (I used Feng He Garden soy sauce)
  • 0.5 tablespoon sesame oil 
  • Dashes of white pepper
  • 2 teaspoon corn flour/starch

Steps as follows or Follow the pictorial below.
  1. Mix the meats & veggies together. 
  2. Add in soy sauce, sesame oil & pepper and keep mixing for 5 mins at one direction. This will make the meat mixture QQ.
  3. Add in the corn starch/flour and mix well for another 2 mins.
  4. Take a wanton skin. Add a big portion of meat mixture in the center. 
  5. Wrap it up like an open flower. Line them on the plate and top with a small pcs of salted egg yolk. Repeat the rest until u finish all the meat mixture.
  6. Heat up a steamer. Steam the meat dumpling for 10-12 mins under high heat. Serve it hot! 

Ready to send to steamer for hot bath. :)
Note:
  1. Some Siew mai recipes call for fish paste, you can add in 100g fish paste to this recipe too. However, please adjust the soy sauce as some fish paste is very salty.
  2. If you are not using Feng He Garden light soy sauce, I will suggest to add in 1-2 teaspoon of sugar for sweetness.

Taiyaki Revisit

A recipe with no store bought premix required. I had shared making Taiyaki before, please check it out here too.
Tayaki
(Make 10pcs)

Ingredients 
  • 225g cake flour 
  • 4 tablespoon caster sugar
  • 2.5 teaspoon baking powder
  • 1 egg
  • 320g full cream milk
  • A little of oil to apply on the Taiyaki pan
  • Nutella/Red bean paste/cream cheese for the filling
Steps
  1. Mix everything together to get a smooth batter and let it rest for 10 mins.
  2. Refer to pictorial to make Taiyaki in a Taiyaki pan.

Korean Seafood Pancake

Breakfast at home on weekend are common in my house. I love having breakfast with them together and love to look at their satisfying face eating with the food I prepared for them. Today is no exceptional, Hot crispy and chewy Pancake is served on Sunday morning.
Top the pancakes with chilli sauce & mayonnaise,
So crispy & chewy & yummy! :)

Korean Seafood Pancake
Serving for 3
Recipe adapt from CJ Pancake mix

Ingredients 
  • 200g Korean Pancake mix
  • 340ml water
  • 150g squids
  • 150g shrimps
  • 50g chives
  • Black pepper to taste
  • Oil for Pan fry

Steps(refer to pictorial for better understanding)
  1. Cut, wash & rinse the squids, shrimps & chives.
  2. Add in the Pancake mix & water on a mixing bowl. Mix it well.
  3. Add in all rinsed squids, shrimps & chives, black pepper to the mixture and mix them together. 
  4. Heat up your pan with oil.
  5. Put the mixed batter with ingredients in the pan and start frying it. 
  6. Pan fried the pancake for 5 mins each side or till both sides are golden brown.
  7. Ready to serve with your favourite sauces.

Note:
  • I bought the pancake mix from the supermarket (NTUC).

Potatoes croquettes

Potatoes croquettes for my kids snack today! I believe your little ones will love it as much as mine!
Potatoes croquettes
Recipe by Taglicious
(serving for 2-3 persons)

Ingredients:
(Main)
  • 400g russet potatoes
  • 2 tablespoon of olive oil for stir fry
  • 1/2 cup of corns
  • 1 small carrots
  • 1/2 yellow onions
  • 150g bacons
  • some salt & pepper to taste

(Coating)
  • 80g corn flour
  • 2 beaten eggs 
  • 80g bread crumbs

(Fry)
  • vegetables oil

Mayo & tomatoes sauce for dipping
  • 2 tablespoon of mayonnaise 
  • 1 tablespoon of tomatoes sauce

Steps: Refer to pictorial for the steps.
Note: Any extra can be freeze. Thaw & cook again before serve. A good idea for kids recess time too.
