Thanksgiving Week

My parents came up from The Woodlands to be with us for Thanksgiving. We had fun showing them some new places in OKC.

First night went to rePUBlic in the new Classen Curve.

Next night got to take them to a basketball game vs. the Dallas Mavericks!

The cold front came through that night - so we opted to hitch a ride! :)

Thanksgiving Day

It was nice Jeremy's Mom was able to join us for some turkey & gravy!

The guys got to play a round of golf at Oak Tree National where they host the Senior PGA

Saturday we headed down to Norman for our sweet friend Joni's 30th birthday

It was also OU game day vs OSU - we won!

The food was amazing!!

Tim also made a special roll just for his birthday girl!

The last night the guys made grilled quail & dove that Dad had brought from his west Texas hunting trips.

YUM! Quail (one that looks like a bird) is like a tiny chicken breast

I really enjoyed the dove - its dark meat but oh so tasty wrapped in onion, jalapeno & bacon!

Tri Delta Sisters!

Roasted Butternut Squash Soup

My new FAV for the holidays!!!!

Peal & cube the squash, toss with melted butter...put on broil till brown...

 in the mean time; brown chopped onions, celery & garlic....

 blend roasted squash....

 put all together with heavy cream and voila its done!!!

garnish with sour cream & top of celery leaves!

(hubby's new favorite!)

Fried Green Tomatoes

My mother-in-law gave us some green tomatoes from her garden. (thank you Paula!) Instead of waiting around for them to ripen I thought I would give Fried Green Tomatoes a try!

 fun little snack which we dipped in ranch! They were yummy but want to try pickles next time for some zing!

SCUBA!

Last month for our 2 year anniversary we gifted to each other scuba certification class. It was quite the process: 1 day class room, 2 days training in pool, 2 days training in open water but the certification is for life! We felt quite the accomplishment when it was all said and done. It definitely takes some getting used to breathing underwater but our instructor made us feel so comfortable & safe.

Our open water portion was at Lake Tenkiller - about 2 hours east of OKC. I had never been there before, it was beautiful with clear water (as clear as lake water can get)

Gearing up - you always dive with a partner who is always near and helps you get your gear on too! :)

HERE WE GO!

Our dive class combined with another group & 2 instructors. Our instructor was Eric - on the far right.We saw lots of bass, perch (who would follow you around), catfish and a sunken school bus and plane!

After day 1 of open water dive we went on a little nature drive....

Fall was in the air...or should I say water...

we came across a water snake!!!

and a roadrunner.

We brought Sid too because he loves the being at the lake - he looks so happy in this pic!

That night at our cabin we made a campfire & enjoyed some s'mores!

YAY we are finished & certified divers!! It was so fun doing this together as a couple and cant wait to go on our next dive! Thanks to Lindsay & Jeff for not only getting us interested with all their fun pics from their dive trips but helping us find a wonderful dive shop & answering many questions along the way!  

Since you cant talk underwater you learn an array of hand signals...this signal "OK" is used the most underwater.
