I found this in Better Homes and Gardens magazine...trying it this year for Thanksgiving. I don’t usually post unless I have tried a recipe but I think this sounds amazing and wanted to share in case anyone else wants to make it for the Holidays too! :) Will post picture after making! :)
1 recipe Single-Crust Pie Pastry, below
1 15 oz. can pumpkin puree
2/3 c. pure maple syrup
1/4 c. packed brown sugar
1 tsp. vanilla bean paste or vanilla extract
1/2 tsp. salt
3 eggs, slightly beaten
3/4 c. milk
1 recipe Salted Pecan Brittle, below
Prepare Pastry for Single-Crust Pie. Preheat oven to 375F.
For filling, in a large bowl combine pumpkin, maple syrup, brown sugar, vanilla and salt. Add eggs, beat lightly with a fork until combined. Gradually add milk. Stir to combine.
Carefully pour filling in pastry shell. To prevent overbrowning, cover edge of pie crust with foil. Bake for 30 minutes. Remove foil. Bake about 25-30 minutes more or until a knife inserted near center comes out clean. Cool on wire rack. Cover; chill 2 hours. To serve, top with Salted Pecan Brittle, whipped cream and drizzle with maple syrup. Makes 10 servings.
**Alternate way to prepare crust**
Roll the pastry out until about 1/8-inch thickness and 12 inches in diameter. Drape pastry over an upturned 8-inch cake pan. Some of the dough will hang down the sides. Place a springform pan over the cake pan and invert. Remove cake pan. Gently pat the pastry into the springform pan and about 2 inches up the sides. Crimp pastry with a fork. Place pan on a baking sheet. Bake as directed.
Single-Crust Pie Pastry
Stir together 1 1/4 c. flour and 1/4 tsp. salt. Using a psatry blender, cut in 1/3 c. shortening until pieces are pea-size. Sprinkle 1 tbsp. cold water over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening dough, using 1 tbsp. of the water at a time, until all the dough is moistened (about 5 tbsp. water total). Form dough into a ball. Using your hands, slightly flatten pastry on a lightly floured surface. Roll pastry from center to edges into a circle about 12 inches in diameter. Wrap pastry around rolling pin; unroll into a 9-inch pie plate, easing it in without stretching. Trim pastry to 1/2 inch beyond edge of pie plate. Fold extra pastry under. Crimp as desired.
Salted Pecan Brittle
Line a baking pan with foil and coat with nonstick cooking spray, set aside. In a small saucepan combine 3/4 c. sugar and 1/4 c. water. Stir over medium heat until sugar is dissolved. Bring to a boil. Boil, without stirring, until mixture turns a dark, amber color, about 10 minutes. Stir in 3/4 c. toasted chopped pecans and 1/2 tsp. sea salt. Remove from heat; immediately pour onto prepared baking pan, spreading evenly. Immediately sprinkle with 1/2 tsp. sea salt. Cool completely. Break into large pieces. Makes about 8 servngs. Store in a covered container at room temperature up to 1 week.
Whipped Cream
Beat 1 c. cold whipping cream (I use heavy) with 1 tsp. vanilla and 1 tbsp. granulated sugar until soft peaks form. Spread evenly over pie before topping with Salted Pecan Brittle and a drizzle of maple syrup.
