Many years ago while attending a summer music camp for violin teachers, I was in my usual position of feeling awkward and inadequate in company with so many seasoned colleagues and mentors.  As I was trying hard to improve my skills as a teacher, to work with young violin students and assist on the piano when necessary, I was introduced to the honored guest instructor.  She simply shook my hand, smiled and said warmly, "I like you."  I nearly crumbled on the spot as I realized she had noticed my efforts and cared enough to say something encouraging and kind.

To you, my invisible friends, who know how, in a myriad of ways, to express gratitude for my clumsy efforts, I say:  I like you...you make every day a Thanksgiving Day!

Candida Warrior Recipes...

PUMPKIN PIE FILLING

Pumpkin Pie Filling

In a saucepan, combine:

1 (.25 ounce) pkg. unflavored gelatin
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ teaspoon sea salt

Stir in:
1 (14 oz.) can full-fat coconut milk
¼ teaspoon powdered stevia extract
2 eggs, beaten

Mix well. Let stand one minute, then place over low heat, stirring constantly for about 10 minutes, or until gelatin dissolves and mixture thickens. Remove from heat.

Stir in:
1 (15 oz.) can organic pumpkin puree
 
Mix throughly, pour into crust and chill for at least 3 hours before serving.  Since this is an uncooked pie, it will have more of a custard consistency.

In 1984 in a paper published in Mycopathologia, researchers said that systemic infection caused by candida albicans induces a nonspecific immunosuppression.  This pathogenic yeast will take advantage of any weakness in the body that can be caused by anything from living in a moldy home, poor nutrition, chemical exposure and bacterial infection to drugs like antibiotics, steroids, pain killers, sleeping pills, chemotherapy, radiation, immune suppressors and birth-control pills.

Candida loves a moist, warm and acidic environment and  thrives on sugar, processed carbohydrates and a low-mineral diet.   It creates fungal poisons, called mycotoxins, which greatly resist being broken down in digestion.  They remain in the food chain in meat and dairy products and even temperature treatments such as cooking and freezing do not destroy some mycotoxins.    (http://en.wikipedia.org/wiki/Mycotoxin

LORENZO'S OIL

CANDIDA WARRIOR:  MY STORY


 
I am telling my story because ten years ago in November of 2002, I was literally on my deathbed--at age 52. I was not able to walk without support and at one point my husband was having to feed me. I had a continuous rash over my entire body which kept me in so much pain that I never slept, except in utter exhaustion. I became malnourished. Neither my medical doctors nor I had any idea what Candida was or that it could kill.

As a child I developed eczema at age two and through the years my parents tried everything they could think of to keep the rash under control, mostly with topical steroid creams and occasional treatments by a naturopathic doctor. I had a severe outbreak as a missionary in Taiwan and was on two or three weeks of cortisone tablets. As a young mother I developed intermittent asthma, bronchitis, IBS and then chronic vaginal yeast infections and UTI's. I don't recall ever having a normally-functioning digestive system. Then I began having severe allergic reactions and chemical sensitivities. Doctors told me that my digestive disorders were not worrisome and prescribed several rounds of antibiotics for the infection. I continued to get worse.

In the summer of 2002, I decided to go to my dermatologist and ask if there were any new products for skin rashes. He prescribed Protopic. The allergist prescribed Elidel.  Little did I realize, both products are immune suppressors. After that, all hell broke loose. I developed a full-body rash and had "electric shocks" shooting through my legs.

I began doing research online and found a doctor who was willing to communicate through email and telephone calls. He knew what was wrong with me and began to teach me about Candida yeast and the damage it was doing to my digestive tract. He helped me change my diet completely to exclude sugar, grains and fruit and told me what natural supplements to take. These included large amounts of probiotics, anti-microbial herbs, glandular extracts, enzymes, vitamins, minerals, amino acids and herbs for intestinal and respiratory immune support. He also recommended prescription anti-fungals that would help kill the organisms like Lamisil, Fulvicin, Nystatin and Diflucan. So I went back to my dermatologist for help and he listened. I slowly began to recover.

In 2006, I went to a local nurse practitioner who found strep on my back and prescribed Keflex, another antibiotic. She also put me on another three months of Lamisil and I stayed on probiotics.

In 2008 I saw my family doctor for H. pylori and was given two antibiotics. More yeast flare-up. So I took lots of probiotics and added supplements such as slippery elm bark, turmeric, raw apple cider vinegar and raw garlic with olive oil at various times and I finally recovered. Later, the doctor was persuaded to prescribe some Nystatin and Diflucan. I went to a naturopathic doctor for massage and colonics. I have gradually been able to build up to a regular exercise routine.

During this time I asked lots of questions and prayed a lot. I wanted to know why and how everything worked. The computer became my best friend. I Googled everything. I did not and do not now believe everything I read, but I just compiled information in my mental files and watched for patterns of agreement among health professionals and scientists that supported going in a specific direction. I began to see another view of health and nutrition that I had never seen before.

With my husband's help I began to clean up my environment. We bought air purifiers and a filter to clean the air. We bought a water filter for our home and shower filters to clean up the water supply. We got rid of most of our carpet and tried to buy all-natural fabrics. I discarded all my household cleaners and beauty products and replaced them with all-natural products. I learned about nasal rinsing and essential oils.

Most importantly I operated on the assumption that GOD MADE IT RIGHT! He created my body to heal itself if I would take care of it properly. So I began to do anything I could to put only the purest things into my body. I learned more and more about herbs and super foods that were highly nutritious. I avoided all processed and genetically-modified foods.

Year by year I have continued to improve but I am determined to be diligent. My Candida may never be completely eradicated, but I am going to fight for others until I run out of time and then I will turn the fight over to you, the next generation, to continue the battle. THE CRACK IN THE MIRROR

For almost thirty years I have lived with a crack in my bathroom vanity mirror.  It's low, doesn't distort the image in the glass and doesn't seem to get in the way of my morning routine, but it does remind me daily that there are flaws in virtually everything I do and say.  

I remind myself that anything of true beauty has an element of imperfection.  In every piece of great music or art or indeed, in each of our lives, there is something strategicallly placed to infuse a bit of unpredictability, humor or mystery--a kind of unsettling tension--that when resolved leaves us with a powerful feeling of fulfillment and peace.  We all have a truly unique, God-given kind of flawed beauty, but it is comforting to think that in spite of the flaws in our "mirror," we are still usable. 


In the Book of Mormon, God tells us, "I give unto men weakness that they may be humble," but we shouldn't use that as an excuse for negligence.  In spite of our weakness we still have a work to do!  He promises "I will make weak things become strong...." (Ether 12:27) and that as we come unto Him, He will "consecrate our performance" and it will be sufficient.

(2 Nephi 32:9)  

It is through the Atonement of Jesus Christ that we are enabled, every minute of every day, to receive power from on high (Grace) to overcome our weakness, to rise above our natural inclinations and the conventional wisdom of the world; to be healed, both spiritually and physically, that we may serve.


Yes, I have to admit, that reflection in my glass is broken, but it will serve.

Candida Warrior Recipes...
RAW LASAGNA AND FLATBREAD
 
Raw Lasagna

For bottom “cheese” layer, blend in food processor until creamy.
(May need to add a little water or olive oil to achieve a spreadable consistency):

1½ c cashews, soaked for 6 hrs. (or almonds) 
2-3 cloves pressed garlic
dash sea salt and pepper
juice of 1 lime or lemon
½ tsp dried oregano leaves
½ tsp dried basil leaves

Marinara:
In food processor puree:

1 cup sun-dried tomatoes (soaked for about one hour)
2 T extra virgin cold-pressed olive oil
1 clove pressed garlic
dash of sea salt and pepper
½ tsp each dried oregano and basil

Add:
3-4 medium chopped Roma tomatoes (may puree or leave chopped)

Layer nut cheese on bottom of 8x8 pan.

Top with:
1 medium grated zucchini
1 cup chopped baby spinach or other greens
1 chopped avocado.
Top with marinara and olives.

Serve at room temperature.

FLATBREAD
(From Kristin Kons--Know the Cause)

Ingredients
• 1 ½ cups blanched almond flour
• ¾ cup tapioca flour
• 1/3 cup (2 TBS whole seeds) ground flax or ground chia seeds
• 1 teaspoon xylitol or raw honey or 7 drops liquid stevia
• ½ teaspoon baking soda
• ½ teaspoon sea salt
• 3 organic eggs
• 1/3 cup plain organic yogurt, preferably full fat or low fat
• Any dried herbs with sea salt– Italian seasoning, Frontier Adobo Seasoning blend (my favorite!), or whatever seasoned salt you like.

Directions
1. Pre-heat oven to 350º
2. In a large bowl, combine almond flour, tapioca, ground flax or chia, xylitol, baking soda and salt.
3. In a small bowl, blend eggs and yogurt with an electric mixer for about 30 seconds.
4. Add the egg mixture into the dry ingredients and use mixer or stir to combine until it forms a sticky, wet dough.
5. Pour batter onto a 12×16 jelly roll pan/cookie sheet lined with parchment paper or asilicon baking mat. Smooth batter out with a spatula over the entire surface area, so it is thin and even.
6. Sprinkle herbs of choice and sea salt (if you're using a salt-free seasoning blend) evenly over dough.
7. On center rack of oven, bake at 350º for 8 minutes, or until a toothpick inserted into the center comes out clean. Don't over bake or it will be too dry.
8. Cool and cut into desired size. I like using a pizza cutter to do this.

Quick Notes
Storage: I wrap my bread in parchment paper and then seal it in a Ziploc bag. I prefer to store mine in the refrigerator to keep it fresher for longer.
Freezes beautifully in parchment paper and a ziploc.
The number of servings vary depending on what you are using it for and how big the slices are.

Phase 1 Diet Friendly Variations
Make a sandwich with pesto, turkey, tomato and spinach or toast it and top with some almond butter.
Use it as an appetizer or side and dip it into some olive oil mixed with some herbs and spices, hummus or just a little butter. Use your imagination the possibilities are endless!
