This has been my lunch every day for the last 7 weeks.
Now you can understand why I haven't been blogging much about food! 5 more weeks to go.

Overnight crockpot pumpkin pie oatmeal
Can't eat this just yet, but it sounds delish! I would use honey or agave nectar for sweetener, if you are trying to avoid processed sugar.
Overnight Slow Cooker Pumpkin Pie Steel Cut Oats: No
Sugar Added
1 cup steel cut oats – don’t quick oats or you’ll have
mush!
3 cups water
1 cup canned pumpkin puree
1 teaspoon vanilla extract
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
optional: 1/2 cup honey or 2 teaspoons vanilla liquid
stevia*
* Sweetener can be added during cooking or cook it
without and each person can add their own sweetener of choice on top after
cooking.
Combine all ingredients in your slow cooker
and cook on low for 8 hours. Enjoy!
