Iron-fortified cookies

This recipe is great for that picky little eater who is low in iron, or just for a semi-healthy treat. Using iron-fortified infant cereal as part of the flour, it's a tasty way to get some extra iron in your kids' diet or even your own.

Ingredients:
1/2 c. shortening
1/2 c. sugar
1 egg
1 1/2 Tbsp whole milk
1 c. all-purpose flour
1 c. infant cereal, any kind
1 tsp. baking powder
1/4 tsp salt

Cream shortening with sugar until well-blended. Add egg, milk, and dry ingredients. Mix well. Drop dough by spoonfuls onto greased cookie sheet, and flatten with a fork. Bake at 350 degrees for about 10 minutes. Let cool 10 min. before serving. Makes about 1 1/2 dozen cookies.

Notes: My dough was a little dry, so I added about a tablespoon more milk. And I added chocolate chips because who doesn't like chocolate chips? But they would be good without the chips, or even with raisins.
