It's Whats for Dinner

Roasted Red Pepper and Basil Pesto Penne 

Recipe Spotted on Annie's Eats

 I made this last night and it was so delicious! We paired it with a favorite wine of mine Menage a Trios  I would def. make it again, but next time with a whole wheat pasta, for that extra kick of healthy! This dish just tasted fresh and light! Yumm!
Ingredients:
3 cloves garlic
1/3 cup pine nuts
1/3 cup grated Parmesan cheese
1 cup roasted red bell pepper (fresh or jarred)
1 cup basil leaves
½ tsp. salt
¼ tsp. pepper
1/3 cup extra virgin olive oil
1 lb. penne pasta
¼ cup heavy cream, optional



Directions:
Place garlic and pine nuts in a food processor.  Pulse until finely chopped.  Add Parmesan, red pepper, basil leaves, salt and pepper.  Pulse until well combined.  With the motor running, add olive oil through the feed tube and process until incorporated.  Set aside.

Cook pasta according to package directions.  Drain and return to the pot.  Add the pesto to the pasta and stir to combine.  Stir in heavy cream if desired for a creamier sauce.  Heat until warmed through.  Serve immediately.

Hi, I’m Jon. I’m a Beagle/ Hound mix, who came to the RVSPCA after my owner could no longer care for me. I am guaranteed to always have a smile on my face. I’m a really energetic, full of life guy, who loves to have fun. I’m still in the puppy stages and I don’t know many tricks or what good manners are. I’m hoping to find a home that will be go with me to obedience classes and will teach me new things. I just hope that my new family will be patient with me while I’m learning. I am very friendly and love being around others. I definitely like to see people happy, and like to give lots of love to others when they are upset.  I also really enjoy playing and running around. I just want everyone to be happy and will go out of my way to make sure others are happy. You should stop by the RVSPCA and say hi to me and my friends!

I saw this amazing recipe for Veggie Laska online and just had to try it out for myself! Yes their version looked much prettier than mine, but mine was still very delicious, if I do say so myself! 


My Twist on Veggie Laska!


chicken laska

3/4lb (350g) fresh Singapore noodles (i used raman, hey it's way cheaper)
2oz (60g) Laksa paste or other Thai curry paste
1 large can (1 1/2 cups) coconut cream
2 cups mixed chopped vegetables (carrots, one zucchini, one red bell pepper)
handful fresh basil leaves (local as from my backyard)
two chicken breasts 

Place noodles in a heatproof bowl and cover with boiling water. 
Allow to stand for 1 minute then massage to loosen into individual strands. Drain.

Meanwhile heat 2 tablespoons of peanut or other vegetable oil in a large saucepan over medium heat. Add curry paste and stir fry for 30 seconds. Quickly add coconut cream and 2 cups boiling water. Bring to the boil and add vegetables. Simmer for 2 minutes or until vegetables are cooked to your liking. (I let mine simmer for a bit to let all the veggies and chicken really soak up the flavor of the curry)

To serve, divide noodles between 3 bowls. Pour over soup and vegetables and top with basil leaves.

Three




Three years ago today, I married my sweetheart. It is amazing how fast these three years have passed. It seems like just yesterday we were eating Chinese food on the empty carpet floor of our first apartment. Now we own a wonderful home, get kisses from our bundle of joy, and are constantly embarking on wild excursions (sometimes involving tasty ethnic foods).

Every minute I spend with Lauren is an adventure. I have had more fun with her in the last three years than I could have imagined.

I'm not sure why, but 'three' seems like such a special and romantic number to me. Strangely enough, I have learned over the last three years that I am not nearly as romantic as I thought I was. At any rate, I have been slowly learning how to love someone else more than myself and Lauren deserves every bit of it.

In honor of our third anniversary, here are the three things I love most about my beautiful bride, Lauren Christine:
  1. Her attention to detail.
    Everything Lauren does is carefully thought out. It is planned and orchestrated. She is fantastic at whatever she does, and she constantly amazes me. She amazes me even in even the smallest of tasks, such as stacking my pants ever so neatly in the closet (a task I can't seem to figure out how to do) or rearranging our bedroom to make it feel twice as big, by simply moving a piece of furniture. She has the ability to make a mountain out of a molehill or a molehill out of a mountain, whichever is required. It's nothing short of amazing
  2. Her willingness to serve and help others.
    For anyone who has spent more than 10 minutes with Lauren, you know what I mean. She has such a genuinely caring spirit and a willingness to serve people even when she knows there is nothing for her in return. I can't tell you the number of times Lauren has sacrificed her time and plans for friends and for me. This is the same wonderful quality that I fell in love with shortly after meeting her and I still love so much today.
  3. Her ability to push me to be a better husband, believer and friend.
    Lauren has been so incredibly patient with me over the last 3 years. We have experienced times of difficulty and times of comfort. She has forgiven me time and time again for making the same mistakes. My actions and words have hurt her but she has not held it against me. She pushes me to be better. She encourages me to run towards God and towards her, rather than to let me run away. She is a picture of grace. I want to be better because of her.

Since I limited myself to three, I have omitted many obvious characteristics such as her amazing beauty, style, laugh, spiritual example, her love for animals and her ability to be content with simplicity. Lauren has so many wonderful attributes that it would be impossible to keep an accurate list. The simple fact is that I love her more than ever. I know all of you love her too. How could we not? She is amazing and I hope she never gets tired of hearing it from me.

Lauren, here's to more excitement and more fun over the coming years. I love you.
