All things Baking
So if you know me, you know I LOVE baking! (Cooking is okay, but I get oh so excited to try new baking recipes and am a little more ho-hum when it comes to experimenting with cooking).
If you're like me & could spend HOURS pouring over new recipes or blogs, I thought I'd share my three favorite blog sites on food (so not just baking - but they do have some pretty phenomenal recipes I'm dying to try! but also to cooking, healthy eating & even recipes for first & second foods for babies!):

Ode to Newfoundland
This is perhaps the BESTEST Christmas story ever! (But I could be biased b/c I'm a newfie!) This book has been in our family since I was little & while I had hand-typed it all in below, my guilt over copyrighting got the better of me so I just deleted it all & leave you with the opening & closing paragraphs only. Finally DINK!
Well, except for the NK part, Brier makes that part false! Finally both of us are generating an income - granted mine is currently EI, but that will change in 6 1/2 months!
After 3 degrees and about 8 years in school Lowell unofficially graduated on December 2! (official graduation is in June, but once his teaching cert is mailed to him he can be teaching right away).
He will have accumulated: a BA in general & biblical studies, a BGS with minors in math & Kinesiology, a BEd & a teaching certificate. Phew!
This week began the job search & application processes, because he's been to like 1/2 dozen schools it makes getting transcripts quite the job!
His first interview is for the TOC call list for Abbotsford school district on the 14th. The great thing about doing his long practicum in Abby is that it guarantees him an interview - Yay!
While we'd love to stick around here, it this next 1/2 year we find he doesn't get a position in the area full time or if the TOC work isn't steady enough, we're open to the possibility of moving elsewhere - we've heard Strathmore AB & other places in AB or up north are desperately looking...but we'd rather stay local! Who knows, we may just be heading your way next year!

A lot can happen
...in 10 months!
After my last post in February, life just sort of happened & I have neglected my blog, mostly b/c I think no one reads it so who would miss my little updates anyway?
Shortly after the last blog my eye began to give me problems - we assumed it was my keratoconus becoming more exasperated due to pregnancy but after a referral & countless visits with the ophthalmologist, it was determined that it was a scratched cornea & a viral infection. Needless to say that was the beginning of a long journey - one we are still on...after 10 months the scratch is now gone & all that remains is the infection which the doctor says could dissipate in just as long a time as we have already seen :(. It has been a long road of pain, agony, a reliance on other people to get me to where I needed to be & the opportunity to enjoy walking everywhere I needed to go within walking distance. I can't tell you how many friends & family gave of their time to drive me to places, of that I am truely thankful!
April saw us on a trip to Edmonton to visit family & friends of which I would like to say I enjoyed, but I couldn't really see & was in so much agony, that, let's be honest, it wasn't as enjoyable as I had hoped. It also saw me take all my vacation time & sick days to spend my days at home until my maternity EI kicked in in July because I couldn't work due to said eye condition. Now that, however was enjoyable! I spent my days walking, mowing the lawn, sleeping in, and just preparing for this little bundle that would be joining us soon. My original plan was to work up until B was born, but God had other plans & I'm glad he did because, while lonely, it was nice to relax.
In May our boys moved out & we have been blessed to have 3 amazing ladies upstairs! They have been such a joy to have around while on maternity leave! They made us food after Brier was born, visited us in the hospital, drove me to midwife appointments, took me to the hospital when I broke my toe at 35 weeks pregnant, prayed for me, bought Lo a gift of a movie & free babysitting so we can get away on a date, and the list goes on...
June had me hanging around the house not doing much but keeping busy none-the-less while Lowell was in school.
And finally.....July 4th when everything changed! The morning began like any other (a 6:30 weight room session at the gym at 40 weeks & 1 day pregnant - come one, who doesn't do that!). I wasn't about to go over any further in our due date, and let's face it - walking just wasn't cutting it! Shortly thereafter contractions began & by 11:19pmwe were blessed to be holding our beautiful, perfect baby girl Brier Rhys!
There have been many complications - an short & easy delivery with no drugs but a long recovery, low milk supply (prompting countless trips to the breastfeeding clinic in Vancouver, relying on someone to take us there due to my eye), and my chronic eye condition, but we have been very blessed in every other way. My mom stayed for the month of July & come August when Lo had to leave for 2 weeks his parents came & helped me to care for B since I was still recovering from Labour.
In September Lo began his long practicum here in Abbotsford - another amazing thing to have happened for us as it means shorter days away from home.
October we dedicated Brier & our niece Keziah (1 year) was dedicated at the same time really meant a lot to me.
November we had Lo's 30th b-day!! I had a friend make a cake of a mountain with some rock climbers & surprised him at a dinner we had with some friends from the climbing gym. We had to call Lo's parents down for an emergency week as my eye got really bad again & I was unable to care for Brier with Lowell unable to take time off school.
Now Brier is 5 months old & loving life - she's happy as can be & we never had any issues with her in regards to colicky, gas, etc. She never fails to make us smile & is constantly learning new things which makes me smile!

Preggers! (in case you didn't know yet)
almost 4 months since my last post, teribble, just terrible!
Well, as you know alot has been happening! Keziah was born October 16th, around the 20th we found out that Lo was accepted to PDP (teaching certificate program) & on Sunday the 24th we found out we were expecting too! We are due July 3rd
It was a little surreal - you know the "3rd" option of the pregnancy stick that says "yes you are pregnant but you may not believe it because the line is very faint so if you want, go to the doctor to confirm" :). 2 days later I took it again & there was a definate line that time! I just walked into the room on Sunday morning, woke Lo up & said "I think we're pregnant!". Then just sat there & stared at it for a while, had to get ready for church & yet would constantly check back on the pee stick to see if it really did have a + on it - as if I imagined it or read it wrong or something!
Christmas was the perfect time to tell everyone as it was exactly the end of the first trimester on Christmas Day. We told close family as soon as we found out & everyone else around Christmas.
Christmas was a very busy time then as we had to build a room in our suite (we had abot 300 sq. ft. of unfinished laundry room. Since Lo was starting school in January, his parents came for Christmas & most of the time he & his dad were building our room! Then we'll move into that one, & baby will get our current room. So far the walls are up, electircal done, primed & painted & we just need to get flooring, baseboards & doors on! My goal is to have baby room decorated by 7-71/2 months so that if baby does come early, I'm prepared, no stressing, etc.
I was able to find a midwife within a few weeks & love them! (They are part of our coverage in BC - you can either go with a doctor or a midwive & I prefer the more personal one on one care so I went with midwife).
School is going great for Lo - he loves it but for his teaching/observing in a class has to go all the way to Tsawassen to a high school there (by the ocean) so it takes a lot more driving than we had anticipated out of his day! He'll have all of April & August off so it will be great to have him around for when the baby is around - although he'll be leaving for 2 weeks in August to go on a sea kayak trip to the Haida Gwaii's as part of his Environmental Education practicum so thankfully his parents will be here that month (my mom will be here for all of July) & can help me take care of our little one & Makani!
We are excited about this new journey & look forward to it's arrival & when Lo is finally finished school in December! We are in the midst of looking for renters as ours leave at the end of April & being on Mat leave starting July with Lo in school for another 6 months after that, my EI may not cover our mortgage & living so we are desperately praying that a great family will come along! We would appreciate prayers for that - & a healthy baby & safe delivery!
