Happy 6th Birthday Julio!

This was taken on Julio's 1st birthday, May 30th, 2005, when we lived in L.A. Where has the time gone!? All four of us were spring chickens then!

Blueberry-Almond French Toast Bake

I got this recipe from Elie Krieger, author of Food You Crave. I have tried many of her recipes and have loved them all. So I made this healthy version of bread pudding to freeze in portion sizes for Asher. He loves it and it is very healthy!

1 whole-wheat baguette (8 ounces) cut into 1-inch cubes
2 cups milk (I used 1%)
8 eggs
8 egg whites
1/3 cup pure maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 cups fresh blueberries
1/3 cup sliced almonds
2 tablespoons dark brown sugar

Spray or grease 9X13 inch baking pan

Arrange the bread in a single layer in the baking pan.

Whisk together the milk, eggs, egg whites, syrup, vanilla, and cinnamon. Pour the mixture over the bread making sure it satrurates the bread. Scatter the blueberries evenly over top. Sprinkle the almonds and brown sugar.

Cover and refrigerate for at least 8 hours or overnight.

Preheat oven to 350. Uncover and bake for 50 to 60 minutes. Serve hot!

The Tease

This is what goes on in our house during mealtime. Asher eggs Max on by throwing him whatever food is on his plate or cup until there is nothing left. The fun doesn't stop there; that's when he throws pretend food (poor Max). And of course he tries to get Julio involved but he's more interested in sleeping.

Big Brother

Asher has been nothing but the sweetest, most caring and helpful big brother one could ask for. When Elie is crying, Asher rushes upstairs and tells me, "I'll be right back, Elie is sad!" He rocks him in his carrier, holds his bottle for him, gives him his chupo (pacifier), and even shares his toy cars. Now, if only I could get him to change his diapers too! ; )

Notice as soon as I start the fire truck, choo-choo train talk he bails!

Here is our new set of wheels. Yeah, it's HUGE, but awesome! It's a lot easier than it looks to maneuver around and fit through door ways. I even took it running yesterday and today for the first time and it's a breeze.

Superhero!

Uncle Wes and Aunt Jen got Asher this really cool reversible cape and mask. You've got Batman on one side and Superman on the other. He wears it everywhere we go, even to the grocery store!

Budding Artist

I bought I gigantic roll of butcher paper at Sam's Club for Asher to color or paint on. His eyes lit up when he saw the never ending paper along with some crayons, markers and stickers.
But of course, no matter how big the paper, it always end up like this!
