Before February Is Over...

First I just have to squeal with excitement--My cousin/sister Jennifer is flying the way today!!!!!! I don't get to see her until Friday. But then we will have several days of fun fun fun!!!

Okay, now I have some catch up to do. Here are the promised pics from my dad's birthday dinner.

It looks like Kayli's choking her cousin, but I think they were both having fun... I hope.

Grandpa's little buddy

ChubChubs with my beautiful sister-in-law. That's really what they call her. Being the mother of my own chubby children, I think it's funny because this one is a little peanut!

We are so in love we went out and got matching tired eyes!

My awesome brother and two of his beautiful girls. Taking pictures with babies is a guarantee for success!

And we had to get one of the lovely photographer--my cute mom!

Blowing out the candle on a scrumptious dessert! (I look weird because I'm trying to help Chub Chubs cheer Grandpa on. He's getting up there in age and needed a lot of support!)

My brother and his wife flew off to Saudi Arabia (yes, you read that correctly) a few days later, so my parents watched to girls. The kids and I drove out to hang with them for a few days and did a lot of this:

Starring in the next Harry Potter movie!

I wore this bat costume for Halloween back in the day! I don't think I looked quite this cute though.

And then we broke out the crazy clown wigs:

Isn't she the cutest?! Believe it or not, she actually got mad when we took this off.

I'm glad he's always wearing this shirt for crazy photos like this!

I've posted about the random block throwing game my kids play while in the loft at my parents' home. Well, they played a little of that with Grandpa one night.

Is this scary to anyone else? I am such a good mom!

As you can tell, we had a blast. We always LOVE visits from family and friends! It's so great for my kids to get to know at least a couple of their cousins. The conversations held between Kayli and Elena were priceless!

P.S. A friend mentioned that she couldn't get the link for my "Blood Iron Level Fiasco" to work from last Wednesday's post. Did anyone else have a problem with this? I've checked it out and it should be working. If you haven't listened to this crazy phone message, you really should. You owe yourself at least that much fun today.

Like It Or Not, My Baby's Growing Up

Well, we spent the first part of this week having way too much fun with my adorable nieces (and my mom!). But I'll post about that later.

This post is dedicated to my little man. Ever since he was born it seems like he's been trying to learn the next thing. I remember him trying to sit up as a tiny little newborn. That was funny looking because he was actually a very chunky newborn.
Anyway, he is constantly amazing me with his latest achievements and abilities.

Here is is helping me make the Valentine's cookies last week.
I've mentioned that he's shown interest in potty training. I haven't pushed it because I didn't want to pressure him or get my hopes up, but he just keeps moving towards that goal. Lately he's been asking for "panties" (that's what happens when you have a big sister). So, today we started him in Pull-Ups. And he couldn't be more proud.

Does this pose seem inappropriate?

How 'bout this one?

I'm doing the best with what I've got to work with here. Anyway, he's doing really really well. I'm so amazed with him. And I apologize to those of you who told me about your "easy" experiences with potty training your own children while I was working with Kayli. I had less than kind thoughts about you. Sorry. I also want to apologize to those of you who have suffered through potty training kids like Kayli that really have not interest in that development. It's not fair. Sorry. Well, not that sorry. But a little bit.

I'm still trying to keep my hopes down, but we'll see how this goes.

On a final note, this is what the cupboards in my kitchen are supposed to look like.

The other night I leaned ever so slightly on one of the doors while placing a pot way in the back. Long story short, this is what the cupboard looks like now:

Mom, could you please bring out your wood glue next time you come?!

Valentine's Celebrations!

Last week we had a lot of fun gearing up for Valentinte's Day. The kids and I decided to make cookie Valentines to give to some of our friends. They helped me make my great-grandma's Sugar Cookie recipe and some Royal Icing. Then they helped me cut out the cookies and decorated them after we baked them. Kayli took about 40 pictures of me mixing the dough, but we didn't get any of the decorating process or finished product. Sad, because I thought they looked pretty cute. We got to take them to the playgroup Valentine exchange, their caretakers at our gym, and one friend that I visit teach. We, of course, enjoyed more than our fair share too.

Valentine's Day itself was one of my favorites ever. Blake offered me breakfast in bed in the morning--so sweet! Although, I had to take a rain-check because we wouldn't make it to our class at the gym on time if we didn't both get out of bed. We mostly had a fun and relaxing day together as a family. We enjoyed a romantic evening in since we didn't have a babysitter. But we still had a candlelight dinner and delicious brownies. After the kids went to bed, Blake gave me a series of sweet poems that he'd written for me. But I'm not allowed to share them--sorry! In case you didn't get it from my earlier post--I love my husband. He is amazing and I am so blessed to be with him FOREVER!!!

Turns Out I'm Fine. I'm Just Crazy

"It's okay to be crazy. Being crazy isn't a bad thing. It just means you're different from everyone else. Speaking from experience, that's a good thing."

--my sweet Dad

For being a very healthy person, I have had a lot of weird health experiences. I think it's just because doctors (in general) want to make as much money as possible and therefore order every imaginable test. The most recent escapade was fairly entertaining, although I doubt anything will ever surpass last year's Blood Iron Level fiasco. That was by far, the oddest.

Getting back to the here and now, though. So, I've had sleep issues my whole life. Sometimes they're worse than others and they happened to be really bad when I went in for my annual physical last fall. So, my physician ordered a sleep study. Fantastic. A couple of my young nieces have undergone this test, so I decided I couldn't be a baby about it. We had to reschedule a few times due to various conflicts. So, I finally got to go in for my "sleepover" a couple weeks ago.

So, they check me in and tell me to "get comfortable". I'm not sure what this means, but I decide to go change into my pajamas (the rooms have cameras in them) and then brush my teeth and all that fun bed prep stuff. Then I lay down on the bed and read some magazines that I'm a year behind on. While I'm doing this, a voice from the ceiling tells me to look at the camera and hold still so they can get a picture. She asks some questions and I discover that they also have access to all sound in the room. I don't even have to push a button. So they can listen to my every move. The woman from the ceiling comes in a couple times to tell me she'll be with me shortly, after she gets another gentleman taken care of. The second time she comments that I've had some "big yawns" in a congratulatory tone. Yay for me! I'm sleepy and I can yawn! At least I'm not speaking to her through the ceiling.

Finally it's my turn. There are all these electrodes to be attached to my head--about 30, I believe. Although, it felt like about 50. She starts to put them on the back of my head and then says, "Oh, your hair is too thick. I'm going to have to get the stronger stuff." *Remember this little fact for later on. So, she gets to work with the wires while telling me all about how great the Super Nanny is and how much she loves the Dog Whisperer and how that guy could probably help me with my kids (I didn't mention that I needed any help with them and she didn't have any children of her own, so I thought this was a very interesting suggestion). Anyway, it takes a while, but eventually she gets them all stuck to my head, a couple on my face, three on my neck/chin, one on each side of my neck, and two on each leg. But that is not sufficient to monitor a sleeping body. NO. I also got two chest straps, an oxygen monitor (complete with a VERY bright red light) stuck to my finger, and (the best part) tubes in my nose. That was really fun. The tubes were accompanied with something like a staple with one "leg" up each nostril. I was terrified that I might forget and bump my nose in the night and give myself a couple nose piercings, or something.

Seems like perfect sleeping conditions, right?

This isn't me. It's a random photo on-line. I don't know if he has as many things hooked up to his head. I looked down right freaky.

Anyway, as if things weren't bad enough, she then instructs me how to contact her if I need to get up and go to the bathroom in the night. That's right, I can't do it without her assistance. She tells me about some tests they'll do when she first leaves to make sure everything is connected properly. I have roll my eyes to the right and left, up and down, breath 5 times through my nose, 5 times through my mouth, hold my breath, breath out slowly, clench my jaw, point and flex my feet, blink 5 times slowly, recite all 50 State capitols. Just kidding about that last one.

Then she talks about the different positions I'm "allowed" to sleep in. I mainly sleep on my back, so I wasn't too worried. But she told me that if I'm too far on my side she'll just softly tell me (through the ceiling) to roll over. Like that won't be disturbing at all in the night. Not only did that actually happen once in the night, another time she actually told me that it was "okay to roll over" because I guess I looked like I wanted to. Did I mention that this was a really restful night for me? No? That's because it was anything but.

Fortunately, I did survive the night. My friend (we were tight by now) came in and removed a couple things. Most importantly the nose thing. I could have kissed her for that but I resisted the urge. That thing was TERRIBLE!!! But I won't go into that. She had me fill out a questionnaire regarding my perceptions of my sleep. It also asked me to describe in detail any dreams I could remember. So, I got to tell them that I was at some sort of carnival/fair in the food part. I unintentionally stole a piece of chicken from the booth where an ex-boyfriend was working. I didn't mean to take it, but since I had it I started eating it but discovered that it was not fully cooked. Eew! Then I went to the booth being run by Kayli's ballet instructor and bought some food from her. While there, I noticed three dying fish gasping for breath on the floor. So, I picked them up and put them back in their aquarium. Good morning!

Anyway, then they moved me to a new room and my new sleep technician came to introduce herself to me. Her first words were "Are you ready to be tortured?" Not a good sign.

So, she came in and inspected all my wires. Turns out they pretty much all fell out by this time. So, she commences with putting them back in. That was when I discovered just how gentle the woman last night was. This woman meant what she said about the torture. It hurt! Then she starts telling me about how they have two kinds of paste to hold the electrodes on. This kind isn't that bad, but there's a *stronger one when this stuff doesn't work. "Once that goes in your hair, you can forget about getting it out!" Yay.

Anyway, she gets them all back in and then I begin one of the longest days of my life. It consisted of 5 half-hour naps. I had to run through the mini-tests at the start of each nap and then fill out a questionnaire after. I had about 1 1/2 hours in between each one. I was still hooked up so couldn't really go anywhere. I read a lot. I missed my family. I didn't sleep much during the naps. Finally it was over.

I thought I'd looked monstrous the night before, but it got progressively worse with each nap and each re-attachment of my monitors. So, when they asked me if I wanted to shower before leaving I looked at them like they were crazy. Then I made sure they were really looking at me. Would anyone in their right mind go out in public looking like I did at that moment? Of course, they already had some of my results so maybe they knew I was indeed crazy. But I didn't know it yet, so I showered. Getting the paste out took some doing, but I succeeded. Mostly, anyway. That was the best I'd felt all day.

Then I got to go see my friend and her brand new little baby who had been born in the same hospital the day before. At least the day had a happy ending!

So, I finally got the results back and guess what? No physiological sleep problems here. Which is funny because at my initial consultation, I tried desperately to avoid this sleep study. I knew they wouldn't find anything. They never find anything. That's because I'm healthy. Just crazy. My sleep troubles are all in my head. So, the Insomnia Specialist that I asked to see in the beginning will see me now. I just had to jump through the right hoops to get to her. I sure hope she's helpful. I don't mind being crazy, I'd just rather not be tired.

She's Lucky She Has Such a Great Dad

So, I'll be honest. A part of me was kind of hoping Kayli would forget about going to Chuck E. Cheese's. But when we had some rare free time Saturday afternoon, Blake suggested that we go and fulfill our part of the bargain. So we did.

I didn't think it was possible for me to like that place any less than I did the last time we went, but I do. It's just so crowded and loud and dirty. Can you imagine better circumstances for a kid to be a kid? Fortunately, for them, the kids didn't seem to notice or have a problem with any of that. They absolutely loved it, which was why we were there in the first place.

Kayli chatting it up with the Big Mouse himself--on TV at least. The "real" Chuck E. was oddly elusive the whole time we were there. He'd come out of his room for a brief moment and then literally run back in and close the door quickly. Very friendly. Kayli almost cried the second time this happened because it was always just before it was her turn. Apparently, no one told him that I work out a lot. He's lucky I'm not much of a brawler.

Bryce loved driving this car. Kayli was afraid she'd fall out.

But she loved this one

The good ol' carousel

This picture makes me a little sad. Not because she looks so happy and beautiful, but because I look at it and I don't see my baby at all. Is it just me, or does she look so grown up here?!

These tube playscapes terrify me. Who knows what is inside of them? Germs, spiders, dangerous objects, small rodents or reptiles, nasty kids, etc. And I have no way of getting my children out of them! I was in a bit of a panic attack the whole time he was up there. He was, of course, completely oblivious.

My brother and his family came out for a spontaneous visit on their way to pursue a couple job offers. We met them and my parents for dinner Monday night. They flew from Seattle to JFK, pick up a rental car, and drove to Danbury. My parents were coming from their house. We waited for Blake to get home and then left from ours. The miracle--we all arrived at the same time. Seriously. I thought it was pretty cool.

Anyway, my camera was tucked safely away under the seat of my car for all of dinner, so we'll have to wait until I get photos from my mom to see that fun time. It was a lot of fun. I love my family!

Then my brother and his family came to our house to spend the night. Kayli was delighted because she couldn't get enough of her cousin Elena. The two of them had so much fun together. They kept each other entertained all through dinner and could barely stand to go to bed in separate rooms at 11 o'clock at night! Elena slept in the next morning (their time zone is three hours later than ours) and Kayli kept suggesting that we wake her up.

When she finally came down the stairs, the two of them kept hugging and circling around. It was so cute!

We're definitely excited to spend more time with her and her adorable little sister next week!

Just one final thought. A question really.

How can one tiny sacrament cup in the hands of a toddler manage to soak, I mean soak, half of his mom's skirt, his suit jacket, and still have 3/4 of the water left in the cup to drink? Then, after drinking this for a full minute, how is half of it still left to be dumped in another unsuspecting cup as he tries to place it with the other used cups in the bottom? (For anyone not familiar with the cups used for the Sacrament in our church, picture a large thimble.)

This is just something I've been pondering lately because this phenomenon seems to happen every week. Anyone else have children with similar abilities?

I Won't Make You Wait Until Wednesday

That's right! Gather round, pull up a box of tissues, and get ready for another episode of our blossoming love!

Absence Makes the Heart Grow Way Fonder

The next night was my last in Provo before heading home for Christmas. We spent a little while cuddled up on the couch just being together. I think I gave him his Christmas present that night because I wasn’t sure if I’d see him the next day. It was kind of corny—a mug overflowing with Hershey’s Hugs and Kisses and a CD of songs that made me think of him or us in some way (you can listen to it on our blog playlist. It’s mostly complete). But his apartment was in need of another mug. There weren’t enough for everyone to have hot cocoa after a group date. I’ve just always been really thoughtful. I also found an excuse to sneak into his car and leave him another little love note in his glove. I thought I was so clever!

The next morning I took my last final and then got ready to leave, while anxiously awaiting Blake’s visit. We weren’t sure if he’d finish his final before I had to go. Thankfully, he got there just in time. He gave me my gift and we kissed good bye. My sister Amy drove me to the airport, so I opened the present as soon as I was in the car. And that is when I discovered another amazing thing about Blake—his ability to know what I want before I do. He gave me a Jim Brickman piano book and a note requesting that I learn a few to play for him when I got back. This was the perfect gift for a few reasons. First, I love love love Jim Brickman. Love him. Second, I love playing the piano and it meant so much to me that Blake wanted to hear me play. Third, this was just so thought out and different from any gift I’d ever received from a guy. I felt a little embarrassed about my gift now, but I was thrilled about his.

I got on the plane to fly home and realized that for the first time, I wasn’t 100% excited to be going home. I was still really looking forward to seeing my family, but this time I was leaving something really significant behind. I remember sitting on the airplane, reflecting on the prior few days and just feeling overwhelmed by emotion. What had happened? I still couldn’t believe Blake had cried out of concern for me. What did that mean? And that was when I first began to think maybe this was more serious than I realized. But mostly, it was still a giddy romance and I smiled at the mere thought of him.

It was a fabulous Christmas. I loved being with my family (well, only about half of them were there). I drove my little sister up the wall with incessant chatter about Blake. I couldn’t help it—everything reminded me of him. I had no idea there were so many light blue Honda Civic Hatchbacks out there! I wanted to call him about 50 times a day, but I still wasn’t sure if he felt the same as I did. Looking back, it seems pretty obvious, but at the time I was still afraid of coming on too strong. Also, I mentioned that Blake is from a small town—he had to get into his car and drive to the end of his road to get cell phone reception for our phone calls! So, I felt a little guilty taking him away from his family. We did exchange a few emails to make arrangements for him to pick me up from the airport. He wrote really cute emails. I still have them saved in my old email account.

Anyway, the Christmas break passed quickly and I was definitely excited to be headed back to Provo—and Blake! Don’t tell my mom, but one of my primary thoughts was that of kissing him. Since we’d barely had our first kiss before my departure, this was an experience I hadn’t gotten enough of. Truthfully, I still haven’t. Blake is a fabulous kisser! I know you were all dying to know that.

So, I got up extra early to make sure my hair looked perfect before beginning my 12-hour journey at about 4 AM, put on my cutest new clothes from Christmas, ending with my cute new boots and told my family good bye. I’m sure they were sad to see me go, but also relieved to be spared from further pining for this guy they hadn’t even met. It was a long trip back, more than ample time for me to imagine our perfect reunion. Finally, I landed and headed over to the baggage claim—and a really attractive man with fabulous lips.
I obviously don't have any pictures of Blake and I over Christmas break, so here's what I was up to:
Making Christmas donuts! This tradition goes waaaay back to when we were little. We would make these donuts and decorate them with lots of sprinkles and frosting and then take them around to our friends and neighbors. That was when we lived close to our friends and neighbors. My parents neighbors are kind of far apart, so we have to eat all the donuts. That doesn't seem like such a big deal until you are informed that the donut recipe calls for not one, not two, but 12 cups of flour. Yeah. That's a lot of donuts. I think my mom might cut the recipe in half though. Anyway, just to make sure that I make it into the Guinness Book of World Records for the Longest Photo Caption Ever, this is a picture of my sister-in-law Belky, me, and my sister Megan. What can I say? These donuts are really good, I couldn't wait.
Headed Home!
(See the guy behind me? Blake's lucky my thoughts were only of him that day!)

My version

To pick up from where we left off, I had cried over the phone with Cheryl and my roommates thought I was crazy. There wasn’t much time to dwell on things or I’d fail out of school. From my journal:

“I took my financial exam the next morning. The test was excruciatingly hard! I walked home considering how a career in basket weaving might be. (j/k) I was really down, though. After a nap, and although I didn’t feel like it, I realized I needed to get Cheryl a Christmas present. I went to the mall and bought her Jim Brickman’s newest piano book entitled “Love Songs and Lullabies.” That evening Cheryl stopped by and brought me my gift (I couldn’t open it until she left she warned). We spent some quality time together before I had to get back to my studying.

“Wednesday morning I took my systems test. The test was surprisingly easy and most finished within 30-45 minutes. What a relief! I hurried home and wrapped Cheryl’s present. I knew she was leaving for the airport at 2 p.m. When I called to make sure she was there no one answered! I was so sad because that meant I wouldn’t see her for 2 ½ weeks. Well, I decided to run over and knock on the door. Cheryl answered! I gave her my gift and we spent the next half an hour together waiting for her ride. We then said goodbye. I was already looking forward to when she would be coming back.

“Well, the rest of the day was spent preparing for the last final, my managerial exam. Nick and I studied until 12 a.m. at his house. It snowed that night, something Cheryl had wanted to happen for a long time (ironic). I found a note from Cheryl in my glove. In the note she told me how much she would miss me (sigh). She also told me that she liked me a lot! Yeah, I was ecstatic! I opened up her Christmas present and it was a hug mug, a specially burned CD (lots of good love songs), Stephen’s hot cocoa, and tons of Hershey’s hugs and kisses. It was basically my keep-warm-kit until she got home. I especially liked the CD because she said the songs reminded her of me (and vice versa).

“The next morning I took the managerial test, another hard one, but then I was free! What a beautiful feeling! I missed Cheryl, but I couldn’t stop grinning the whole day long. Clarke and I went to “The Two Towers” that evening to celebrate.

“After finals were over life was better in a lot of ways. Nonetheless, I missed Cheryl pretty bad. The holidays are often bitter-sweet when you aren’t with everybody that you care for. At the time I didn’t know if I loved Cheryl, but I knew that we had something special and I knew that the holidays would be better with her by my side.

“Cheryl called me on Christmas. Unfortunately, I was doing my dad’s special work out and couldn’t talk to her right away. When I finished, I drove the car down to the end of the road so I could have enough reception to call her on the cell phone. We had a really good talk and it was hard to say goodbye.

“Cheryl and I called each other several times including New Years and both Sundays. I wanted to call her more, but I knew how much she needed/wanted to spend time with her family. I consoled myself with the thought that we would have the whole next semester to spend together.

“Well, as unexcited as I was to have the holidays over, I couldn’t wait for Sunday when Cheryl would fly in. Time truly had made the heart grow fonder. I went to the airport at the appropriate time and waited with much anticipation wondering what I would do when I saw her. I sat down to wait and started reading a book. Would you believe that a very attractive girl sat down right next to me and seemed to be making subtle advances? I’m grateful I didn’t pay her the time of day because when Cheryl showed up my heart leapt within. She looked wonderful despite the long flight. We gave each other a long hug and told each other how much we missed one another.”

Sorry so much from my journal, but that’s the best way to explain my side!

The Joys of New England Weather

For the most part, we've been enduring bitter bitter coldness the last while. It feels like a year, but it may have just been a month or so. Those of you with small children know the dangers of having them cooped up for too long. So, we try to keep life entertaining, even indoors. Most of it isn't really blog worthy (although, I really should get some pictures of the kids helping me cook. We've been doing that almost every day since Kayli set her goals).

But last week we decided to make birthday cards for the Grandpas, since their birthdays are only a few days apart.

My kids think that the first step to finger painting is to completely cover both the paper and their hands. And maybe the table, if you can find it under all the newspaper Mom set out.

Doesn't he look devious?

Hmm... I wonder how Kayli would look with green hair!

See how she has sort of etched pictures into the mess of paints? And I love how pleased she looks about it!

This is serious business for Kayli

Now watch what happens while I try to figure out what is going on with the lighting on my camera:

Oh! What is that?

Let's see how it feels

Better yet, let's see how it tastes!

Yuck! So focused was I on the lighting, I had no idea she was doing any of this. Not until my photos were safely uploaded on my computer. Very nice. I'll never know what it was, what she was doing. Or how it tastes.

Anyway, yesterday we had a heatwave. It got all the way up to 40-something! That is more than enough cause for celebration. So, we headed outdoors for a change. And for a little practice on the new bike from Santa.

If only I had thought to go outside while it was still 40-something, we wouldn't have had to be quite so bundled. But I'm pretty sure it was still above freezing by the time we made it out.

Don't be afraid. This is Bryce's bunny face. Like all of his other faces--I love it!

I love her face, too. But I'm not exactly sure of this particular one...

Check out these bicycling skills! She's standing!

Unity Fudge

Yesterday I taught the lesson in Relief Society. Thanks to Blake and the promptings of the Holy Ghost, it went really well. I think part of i t could also be used as a Family Home Evening lesson, so I'm sharing it here in case anyone wants to use it, and also so I have a record of it later on down the road.

My lesson was on unity, focused mainly on the Relief Society group. I took most of it from President Eyring's talk from last General Conference, "Our Hearts Knit as One". I also shared this quote from Marjorie Pay Hinckley (President Hinckley's wife):

"We are all in this together. We need each other. Oh, how we need each other. Those of us who are old need you who are young, and hopefully, you who are young need some of us who are old...We need deep and satisfying and loyal friendships with each other. These friendships are a necessary source of sustenance. We need to renew our faith every day. We need to lock arms and help build the kingdom so that it will roll forth and fill the whole earth."

I love Sister Hinckley. I really wish I could have been friends with her. Anyway, then I did a very clever play on words with the word "knead", as in "Oh, how we 'knead' each other." Amazing, I know.

Okay, now onto the actual part of the lesson that you could use.

First you need the recipe for "Unity Fudge". Also known as "No Cook Fudge".

Unity Fudge

6 oz. cream cheese, softened
4 C. powdered sugar
1 C. baking cocoa
1/2 tsp. vanilla
Pinch salt

Place all the ingredients in a bag (you might want to double bag it, just in case) and tell everyone what you have in the bag. You can talk about how they're all very different, or how they have some similarities (a bit of a stretch but cream cheese and vanilla are both moisteners, baking cocoa and powdered sugar are both powdery and capable of making a big mess if you spill, etc.). I forgot this part in my lesson, but you can also talk about how the ingredients won't really get anything done if they just sit in the bag together but doing nothing. No, they really knead to work together. (Hahaha, I know.) So, you hand the bag to one person and ask them to knead it for a few minutes, then pass it to the next.

While the kneading is going on, you can talk about unity. The point is, when these ingredients are all mixed together thoroughly, they become fudge. That's why I call it "Unity Fudge". Just like all those ingredients, when we become united as one we are so much better, so much more. Who knew we were so much like fudge? There are a lot of parallels to be made here, so feel free to really have fun with it.

A few pointers on the fudge:

  • It will look way too dry at first and you'll think there is no way you got the recipe right. Just keep on kneading, baby.
  • Make sure the bag is completely sealed. I am not responsible for any messes that may happen as a result of using this lesson.
  • Don't double the recipe in one bag. It becomes impossible to get it thoroughly mixed and then you have a batch that doesn't look as pretty as the rest.
  • Near the end you will just have tiny bits of cream cheese stuck in the chocolate mixture. Work these all out individually (you could even make some parallels out of this!). The fudge will look and taste a lot better if you work all of these bits into it.
  • When you are done, place the fudge in a greased pan (I used an 8x8). Smooth it out. I used my little pastry roller from Pampered Chef. It worked great, but couldn't quite reach the edge. Cover it--very important so your fudge doesn't dry out. Then chill.
  • If your fudge has melted to much to smooth out, plop it in the pan and put it in the fridge for 5 minutes or so. But don't forget to cover it! Or the last batch that your family finally gets to eat after watching you make a bazillion batches for everyone else will get dried out. They might not notice, but you will be sad. Trust me on this one.
