Enchanted

Somehow I have been living here 2 month! How did this happen? Time is flying by way too quickly. I still love this place so much, but my honeymoon phase is over and it is more reality. I like feeling like this isn't just a fun vacation but my life that I get to settle into and stay awhile. I go to work, church, FHE, institute, dates, activities, parties, etc. I am enjoying the stability and consistency yet newness and excitement of my life here. It seems to suit me well.

Although I completely love this area, there are things I do miss about Las Vegas like being able to see my family whenever I want to, morning chats and lunch dates with my coworkers, frizz free hair, Port of Subs, Sammy's arugula and pear pizza, free parking, wide streets, getting off work at 2 on Fridays, Eddie my mailman, etc. These are just some little things I have realized lately and appreciate more.

Last weekend we took a tour of the capitol. I think that building is so beautiful! Our tour guide was kind of intense so I rebelled a little when she told us not to touch the statues.




Yesterday, I tried a new recipe for Sunday dinner and it turned out really well! It was easy and had a great flavor. I thought I would pass it along for anyone wondering what they should make for dinner tonight. Enjoy!


Honey Chicken with Peppers

3 frozen chicken breasts
1/2 tsp. salt
1/2 tsp. black pepper
1/2 C. honey
1/4 C. soy sauce
1/8 C. chopped onion
1/8 C. ketchup
1 Tb. veg. oil
1/2 tsp. minced garlic
1/4 tsp. red pepper flakes
red, yellow and orange peppers (as much or little as you like)

Season both sides of chicken with salt and pepper and place in crock pot. Mix together all other ingredients and pour all over chicken, coating both sides. Cook on low for 3 hours OR high for 2 hours. About an hour before the chicken is ready, cut up peppers and place in crock pot. Once chicken is cooked all the way through, remove it and cut into bite size pieces, return to crock-pot and toss around to make sure all sides are coated with sauce.

Specks

One thing that I am proud to say that I have never done is flip someone off. For some, this is a frequent and meaningless gesture. For me, it means more and I decided many years ago that I would only do it once in my life. I have been saving it up, waiting for the perfect moment. It has become something I am kind of looking forward to. The build up is probably more exciting than the actual event will be. I must admit that there have been a few times when I have had a strong desire to do it, but what a let down that would be if I wasted my one "flip off" during the first quarter of my life. If I ever get to rewatch my life after I die, I think that scene will bring a smirk to my face when my hand gesture has to be censored out.

A face to call home

Happy Birthday to my best friend/roommate Kristen! We mostly celebrated yesterday by going up to check out Georgetown. While there, we stopped at Georgetown Cupcakes which is featured on the show "DC Cupcakes". My coconut one was to die for. Then we had dinner and walked around a little. On the way home, it was so pretty outside with the sun setting and an almost full moon that I had to pullover on the side of the road so I could bask in the beautiful views. I have been here for a month now and keep falling more in love with this city. I just walk around smiling all the time. I can't help it.
