giving thanks

 As it is Thanksgiving this week, it is time to share our annual gratitude poster. Every year we take a big piece of kraft paper and all month list the things we are thankful for. Its been fun to have Henry participate this year. During our many FHEs we would slowly add to it and Henry was really good at drawing pictures of the things he is thankful for like basketball hoops, potatoes and cookies. He also decorated it with lots of fun stickers and his preschool crafts.
 He has come home with a few super cute crafts from preschool too. My favorites were this slice of pumpkin pie complete with cool whip cotton ball and this complete turkey dinner below. The turkey leg is a brown paper bag stuffed with paper. It has been heavily played with as you can tell it is pretty beat up. He uses it as a club and has been seen dancing around with it.

And finally what November would be complete without a set of hand turkeys? I love how we each interpreted the challenge in our own ways. Henry said he wanted his on an all red background and Steve's is pretty psychedelic.
We're excited to have a whole week vacation for everyone. No seminary, classes or preschool. Unfortunately Henry has woken up every single night and for hours. Sigh, I guess I didn't send him the vacation memo. But we have enjoyed lots of time together and have a fun holiday planned with friends. And I was able to slip away for four hours to see Catching Fire on Saturday and really liked it. Although now I feel like I need to see it again, anyone else feel that way?

crafting: poinsettia pillow cover

I am all for keeping our holidays separate. Give thanksgiving a chance, people. But that doesn't mean we can't get ahead on a little Christmas crafting. Every year I plan on doing some new pillow design or fabric design with poinsettias and it never happens. After the season is over, I recheck my holiday list and realize, once again I have done nothing with this lovely flower. 

Well this year I decided a personal crafting project might be the way to go to get the task completed. I just browsed for pictures of flowers and kind of made up my own pattern. It took me about an hour to do-seriously its been on my list for years!-and I love how it turned out.
I am not selling these in my shop but I did cut some extra petals so will have a few available at my local craft shows in December. And I am contemplating a giveaway/contest. So if you love it and don't want to make your own, stay tuned!

eaten: Tuscan Chicken

This dish was so easy and so delicious. The sauce seems intimidating because it has a few steps but once you get the right heat under it, it cooks up like a dream.

The only problem I had which triggered a maternity-hormone meltdown was baking the chicken. I used thicker breasts and they took closer to 40 minutes to bake. That screwed up all my other timing and resulted in me throwing a fit in the kitchen, sweaty and mad that the chicken wouldn't hit the right internal temperature. Lesson learned, pound thicker chicken flat and maybe invest in a fan for the kitchen.

But it was so yummy and simple and for all the cream sauce, it did feel fresh. You could even lighten it up by just doing grilled chicken without the breading. Maybe next time. I also love this because you can have the veggies prepped and ready to go in the freezer to pull out for cooking anytime. Did you know you can also freeze heavy cream? And since I rarely use the whole pint, its nice not to waste groceries. Yes, my nesting brain is already dreaming of a freezer stocked with simple meals.


Tuscan Garlic Chicken
Adapted from Double Dipped Life

*Serves 4-6

3/4 cup all-purpose flour
1/2 Tb salt
1 teas pepper
1/2 teas dried basil
1/2 teas dried oregano
4 boneless, skinless chicken breasts (or chicken tenders)
5 Tb extra virgin olive oil, divided
1 Tb finely minced garlic (about 4-5 cloves)
1 red bell pepper, cut into thin strips or chopped
1/2 cup low-sodium chicken broth
6 oz fresh spinach
1/2 cup heavy cream
2 teas cornstarch
1 cup low fat milk
1 cup freshly grated Parmesan cheese
1 pound fettuccine

Preheat the oven to 350 degrees F.

In a shallow pie plate or similar dish, combine the flour, salt, pepper, basil and oregano. Dip each chicken piece in the flour mixture until both sides are well coated.

In a large 12-inch nonstick skillet, heat 3 Tb of the olive oil over medium heat until the oil is hot and shimmering. Carefully place the chicken breasts in the pan, cooking them for 2-3 minutes on each side, until they are golden and browned but not cooked all the way through (they’ll finish up in the oven). Gently remove the chicken to a foil-lined, lightly greased baking sheet and bake in the preheated oven for about 15 minutes, until the chicken is cooked through. Set aside and tent with foil until ready to use.

While the chicken is cooking, heat a large pot of water to a boil and add the noodles, cooking until al dente. Also, wipe out the skillet with a couple paper towels and return it to medium heat, adding the remaining 2 Tb olive oil. When the oil is hot, add the garlic and bell pepper, sautéing for 2-3 minutes.

Stir in one Tb flour and stir constantly while cooking for another minute. Add the chicken broth to the skillet and bring the mixture to a low simmer, whisking constantly, until slightly thickened, about 3-4 minutes. In a small liquid measure, whisk together the cornstarch and cream. Add the spinach, milk and cream mixture to the skillet. Bring the mixture to a simmer and cook, stirring occasionally, until the spinach is wilted and sauce is slightly thickened, about 2-4 minutes. Stir in the Parmesan cheese.

When the pasta has finished cooking, drain and return it to the pot. Toss the pasta with half of the cheese sauce. Place some of the coated pasta on each plate. Top with a breaded chicken breast and spoon some of the sauce over the top of the chicken and pasta. Serve immediately.

bexcaliber: mini advent calendar

I am not officially selling these through my etsy shop this year because I didn't get it together in time for lots of orders but I am offering a special deal to family and friends. 

Every year we use a mini stocking advent calendar to count down the days until Christmas. We fill each stocking with our favorite candies and take turns eating the spoils. Before Henry came along, I would take all the even days with Almond Roca and Steve would take the odds with Twix or Skittles. We either hang them on ribbon like above or hang them in the tree using clothespins. 

I thought it would be fun to design one to print on fabric. It was a crazy few days in front of the computer but I created 25 different holiday patterns. I am in love with this and can't wait until next year when I have even more ideas up my sleeve.

oh baby baby: zitfaced apple eater

15 Weeks
  • I feel like in the last few weeks my stomach has really popped out. Today I am wearing maternity jeans and man, are they comfortable. Sigh. I made it to Nov 19. Some pants still fit but I am slowly losing that battle. And why not be comfortable? Luckily I can refashion all my old maternity-flared leg jeans into skinnies.
  • My energy is BACK! As of week 12 I have been able to go at about 90% my usual pace. I feel awesome. Its so nice to have energy and stacks of to-do lists scattered around the house again. I still need to stop and take rest breaks and sometimes I can tell I am over doing it like the time I went to the gym and then ran errands all afternoon, I was beat. But I no longer need to nap every day.
  • Last time I was pregnant I had an awesome friend, Laurie who gave me all sorts of advice and useful womanly things. I will forever be indebted to her for giving me a bra back extender. I tried to find my old one but couldn't so I had to buy a new one at Joann's for $3. This beautiful contraption extends your bra 1-3" and prevents you from having to buy ugly maternity bras or painfully squeezing into your old ones. Thanks again, Laurie!
  • Zitface. My face is out of control. I cannot believe how many zits I have and how many different types there could be. I have a spattering of tiny, braille like ones on my forehead. I have huge deep, red ones. The kind that never pop but linger for days. There are sneaky ones that erupt in a matter of minutes and there are the huge ones that involve three pores all turning white at the same time. And since I am peeing every hour, I see a whole lot more of myself in the bathroom mirror.
  • One thing I have noticed this time around is that I am SUPER irritable. I can lash out at anyone with no notice. I feel awful about it and kind of feel like I have no control-which I hate. Hopefully this one will pass soon as I am sure Steve and Henry both must think I am losing it. 
  • Apples. I cannot get enough apples. Before recently, if you gave me a fruit basket the apple would have been my last choice. They just don't do it for me plus it is sooo hard to eat a whole one by myself. Now I am voracious and can eat one or more per day. Maybe my body subconsciously knows it needs more fiber and that delicious full feeling. 
  • I am still plugging away at the gym. I have been trying to go 2-3 times a week and now, since my energy is back, I am making it 3 times a week. I definitely don't want to lose all my muscle and since I really enjoy working out, I am going to keep up with it. I even went back to my Power Class which is weight lifting and am enjoying it. I don't think of pregnancy as any type of excuse but I can see myself mentally relaxing a bit. I am more tempted to "take it easy" and I have already completely lost any ab muscle I had. But I have found some new things that are doable and I will hopefully be able to keep up for all ten months. 
  • I haven't been really craving anything specific but I am always in the mood for greasy, savory things. I could care less about sweets but give me some french fries or a salami sandwich and I am good to go. Its odd to want something like that at 9:00 am. And since I eat breakfast at 6:00 am, by 9:00 I am ready for a snack and its usually a sandwich or crackers. Or lets be honest, cheetos.

crafting: simple leaf banner and fall leaf pillow cover

One of my recent goals is to craft more. Not only will is relieve this urge in myself to constantly stretch myself creatively but its just plain fun. My goal is to create free tutorials and templates that people can use for personal use. If you follow me on Pinterest, which you should, I will also be posting these there. So I had drawn out all those leaves to make the crayon glitter garland and thought it would be fun to come up with some other crafts you could do with leaf shapes. The first is a super simple banner made out of felt leaves. The second is a pillow cover using the same felt leaves in two options.

Lately...





A couple of weekends ago, we stopped in to the Watkinsville Fall Festival. Being only 15 minutes from our house, I am surprised we haven't been before. Sadly, we weren't prepared and only had $5 cash which we blew on delicious kettle corn. Henry and I sure are popcorn people. I say sadly, because there were lots of tempting deep fried goodies to sample, ponies to ride and trains to cruise in. But luckily there were lots of good friends to run into and free animals to pet and hold.

Its been pretty quiet around these parts of late. I have been working hard on some new ideas and goals for my shop, Henry has been loving preschool again and Steve has been plugging away at papers and teaching. It feels like a lull between Halloween and Christmas. I guess I should sit back and relax before the whirlwind of the season sweeps me up. Don't get me wrong, I love to be swept up but for now I am content to spend my whole evening cuddling on the couch under a warm blanket watching tv with Steve.

bexcaliber: snowflakes, then and now



 Isn't it crazy how much you can learn and improve in one year? 
I think about how excited I was about learning to design my own fabrics and putting together my first holiday collection. Last year in order to create a repeating image I had to rely on mirror image designing, in theory the image had to match up perfectly so that when repeated it would flow. I also hadn't perfected selecting and isolating images for overlapping so there are large spaces around each design.
 Sigh.
This year I set out to make something so much better and with my new skills, I was able to succeed. Instead of hand drawing the snowflakes in photoshop, not my strength, I hand cut them out of paper. Like a little kid, I sat armed with a stack of printer paper, scissors and covered my lap and couch with snippets of paper. I made about a dozen snowflakes using some tutorials and images from pinterest to get a variation of shapes. 

Once they were all cut, I scanned them to my computer and tidied them up. Some of them didn't turn out perfect but I thought that fit the uniqueness that snowflakes inherently have.
Once I had my snowflakes to my liking, I was able to select them, change their colors and sizes and create a design. I went with a range of reds to celebrate the richness of the season. I also was able to use offsetting which is a helpful tool that splits images and allows you to create a cohesive repeat pattern. Here is a great tutorial on offsetting images in photoshop, this is also called tiling images. You can see in the following image that some the snowflakes fall off the edge of the image but then appear on the other side.
 This tool allows the snowflake to continue once the image is tiled together.
I usually design all my prints in an 18X18"square  because that is the average size pillow cover sold in my shop. But you can't just buy 18X18" pieces of fabric so each design needs to be able to repeat for yards of fabric. Like this one below.
I am so happy with how this one turned out. I cannot believe how night and day my first attempts are compared to now. And I was able to easily change up the colors too making blue and green versions.

 Its so nice to be able to see how much I have grown. Its easy to get discouraged but here is actual proof that I am improving and I am more excited that ever for the holiday season.

crafting: give thanks banner

I never do a lot for Thanksgiving. I think I burn out at Halloween and then just try to make it until Christmas time--when I go CRAZY. This year, I thought if I was organized enough I might be able to get off my butt and get something done.

And hey, I have rediscovered my love for crafting. I get so wrapped up in business stuff, I often leave little time for personal projects. But I have some new plans in the works to bring more tutorials and projects out into the world.
So here we go.

Did you ever make these wax paper/crayon art projects as a kid? Steve hadn't. So Henry and I put our bag of random crayons to good use. Couple that with a variety of leaf shapes, some gold glitter and a seasonal saying and you have a festive banner perfect to make Thanksgiving feel a little more special.

Poor Thanksgiving really is the middle child of the holiday season.

oh baby baby: first trimester

13 weeks!

So now that the cat is out of the bag, its time to start blogging about the wonderful whirlwind of pregnancy. Don't worry, I have been keeping a first trimester post all ready and updated. I thought I did a good job last time about blogging and belly shots but I only have about 9 posts about pregnancy in my archives. For shame. I will be better this time. 

Coincidentally I found this dress at Target at the beginning of the summer and even though it was maternity, I bought it and wore it everywhere. It is a longish high low and super comfy. Let's see if I can make it work all ten months. 

In an effort to capture all the glories and grossness of being pregnant and for the sake of journaling, here are some of the fun things about being pregnant (again):
  • Exhaustion. I am seriously so tired. I don't know if it is a combination of pregnancy and seminary but whatever it is, it has me justifying daily naps. I now have the wonderful talent of laying down anywhere and falling asleep within minutes. Since I consider this a "survival mode" moment, I am more than happy to let Henry play limitless Super Mario as I cuddle on the ground in a makeshift bed. 
  • Crying. I can sometimes be emotional when it comes to movies and such but there is nothing like pregnancy crying. I wept through the season finale of Burn Notice. I couldn't even try and hide it from Steve. You know when you tear up but can avoid eye contact long enough for it to subside. Tears were streaming down my face, I gasped in a sob. Geesh. I mean, crying during Anne of Green Gables makes more sense because I always get teary when Matthew gives Anne the blue, puffed sleeve dress, who doesn't? But Burn Notice? I also cried all through the Primary Program. I couldn't help but be overly proud and emotional of my son singing his heart out and making claws on the stand.
  • Peeing. Now I have always been a big water drinker. I am never without my cup of icy H2O. But now I am unstoppable. And its not the annoying albeit common with pregnant women, the urge to pee and only a teaspoon comes out. I can really pee at any time. Like a satisfying emptying of the bladder. How am I generating so much?
  • Slowed Digestion. On the other hand, I miss pooping. I am a regular girl. Once a day, usually sometimes in the morning. Not now. Did you know that pregnancy seriously slows down your digestion? All that slowness creates a constant state of carbonation which makes you both gassy and bloated and uncomfortable. I don't remember any of this from my first pregnancy. I guess I just didn't have this issue. But this time I can tell you, I have a nice gas-baby belly going on--like if you ate a HUGE burrito and feel pregnant but without the comfort of mexican goodness in your gut. Its unreal. Some days all of my pants will fit and then others I won't be able to even get close to buttoning them. Luckily you can walk around in the comfort of your own home with your pants undone or better yet, in yoga pants. This is very uncharacteristic of me. I feel so much better about myself when I am dressed in real (non elastic banded) pants. Steve knows its been a rough day if he comes home and finds me in pjs. For a terrible two weeks, I was forced to eat every hour or so to keep things moving and help relieve whatever was going on down there. I am now feeling much better and more "regular." And yet now that things are regular, there is still that uncomfortable feeling like I am still full of poo. You know what I mean? Like my intestines are still full but nothing will come out or only a little comes out. I feel like it is all or nothing, its either nothing for days or an embarrassingly explosive incident at an apple farm. Ha ha, aren't you glad you're reading this?
  • Random Shortness of Breath. Now I am in okay shape. I have been able to keep exercising although I was "taking it easy" while I wasn't feeling that great. But I will suddenly be overcome by my lungs incapacity to function. Simple things such as walking up the stairs, cooking dinner and making the bed will leave me breathless. The other day I got into the car and had to stop and catch my breath before driving away. Even sitting is too much for me apparently.
  • Ambivalence. This happened to me last time I was pregnant. Don't get me wrong. I am excited and grateful to be pregnant and to have another baby. It almost makes me feel ungrateful to admit this when so many people struggle with infertility but its the truth. I am not super attached to the idea of being a new mom again (yet). Even during the ultrasound, I was happy everything was in order but didn't swell with emotions when I saw the grainy, alien in my stomach.  
  • Dizziness. Don't worry, if I stand up too quickly I might just sit back down and close my eyes. Or I might just crawl back into bed until the room stops spinning (while I am there I might take a nap). This one is fleeting too.
  • Mega Zits. Last time, I couldn't believe how acne prone I was during pregnancy. It was like an oil slick camped out on my face. I also remember the horror of finding my first non-face zit. Hello armpit. This time has been just as bad. Thank heavens for makeup. 
First Trimester To-Do List:
  • Appointment at the Midwifery. Yes, I'm going midwives!
  • Wear all my form fitting clothes and dresses as much as possible. Who knows when they will fit again?
  • Inventory all old maternity clothing and start a pinterest board of new items to purchase as I expand. 
  • Reread The Girlfriends Guide to Pregnancy
  • Nap a lot
  • Happily eat as much bread as I please without even feeling slightly guilty about it. (This is one of the things I remember loving about being pregnant with Henry. I literally kept a loaf of bread in my desk and would make white bread toast every day at work. Dripping with butter. It was heaven.)

Halloween Night

 To say Henry loved putting on the makeup for his costume would be a major understatement. He LOVED it. And he wanted to help put on his "fur" with a big makeup brush. He also liked being tickled by the brushes and we had a great time creating his look. And since we had three events to attend, he got to do it all three times. He was such a sport and its a good thing because the makeup really adds to the costume.
 On our way to the trunk or treat, Steve asked me why I wasn't just a werewolf too. You know, like a whole family. It got me thinking and I thought it was a great idea. So for trick or treating, I quickly threw together a werewolf costume with the extra fur and lots of fun makeup.
 These pictures really don't do my hair justice as it looked awesome. I ratted each strand and I kept getting whiffs of hairspray all night. It was fabulous. I even had a thin fur choker. Man, I love Halloween.
 Steve kindly said I looked almost too stylish in my skinny jeans and chambray top. It was definitely a make it work moment. After trick or treating I quickly made a pile of all fur clothing, removed the fur and threw it away except I did bag and save Henry's costume. A good vacuuming brought the halloween fur mess to a much needed end. Faux fur is the messiest stuff.
 We were recommended a neighborhood nearby to trick or treat and lucked out to show up right as other families from our ward were heading out. Henry had a great time running from house to house with the kids and only had a few meltdowns when he wasn't the only one who could ring the doorbell. After some talking to, he calmed down and started to enjoy himself. He was really stressing out trying to be the first to each house. It was less work for us to just stand on the street as he ran to each door although my voice was fatigued from yelling constant reminders to be polite.

When I saw this picture I almost died. Henry looks so cheesy and cute. Geesh, what a ham. So here is Henry's Halloween Wall-as he christened it. With all his preschool projects and stickers from Gramma and Grandpa, it became quite the exhibit. He was sad to take it down but we'll replace it with our annual grateful poster and I think he will like contributing to that this year. Or just drawing all over it.
